Papain is said to form the essential amino acid arginine from the dietary proteins. Arginine is important for cell renewal and regeneration of our organs.
The enzyme carpain is said to help control cholesterol levels and have a lowering effect on blood lipid levels.
It is also interesting that the papaya kernels are metabolized in an alkaline manner and can thus balance out “sour” foods.
Papaya seeds can be used as a substitute for pepper. They develop their peppery, hot aroma best when freshly ground.
