Spanish Rice Recipe

This classic Spanish Rice dish is made with Jasmine Rice cooked in onions, cumin, garlic powder, chili powder, tomato, chicken broth and topped with fresh cilantro. Perfect for a side dish or for pairing with your favorite meals.

Ingredients:

1 cup Carolina Jasmine Rice

2 tablespoons oil

1/2 cup onion, chopped

2 cups chicken broth

1 can tomato juice

1/4 teaspoon ground cumin powder

1/4 teaspoon garlic powder

1/4 teaspoon chili powder

1/3 cup fresh cilantro leaves, chopped

Directions:

1. In a large skillet, sauté the rice in oil; add onions and continue to sauté until the onion is tender-crisp
2. Add remaining ingredients, except cilantro, bring to a boil, reduce heat, cover
3. Simmer for 15 minutes
4. Remove cover and fluff; fold in cilantro
